Szechuan pepper
Sichuan pepper is not a true pepper but the dried husk of the fruit of a citrus-like plant. Its aroma is floral and citrusy, and it provides the typical tingling sensation on the tongue from Chinese cuisine. Briefly toast the berries and grind them over stir-fries, fish, meat, cheese, or grilled vegetables.
