A well-filled sandwich can easily compete with a warm meal. Here, everything comes together: juicy chicken marinated with our chicken skewer mix, grilled eggplant, sweet cherry tomatoes, and creamy burrata on crispy ciabatta. The spice mix does the work in the marinade and gives the chicken a deep, slightly spicy flavor that pairs beautifully with the red pesto. Ideal as a hearty lunch or quick dinner, ready in half an hour.

Ingredients

  • 500 g chicken fillet
  • 17.5 g Chicken skewer mix
  • 3 tbsp culinary olive oil
  • 2 ciabatta rolls
  • 1 eggplant
  • 150 g cherry tomatoes
  • 1 ball of burrata
  • 2 tbsp red pesto
  • A few lettuce leaves

Preparation

  1. Mix the chicken fillet with 2 tbsp olive oil and the chicken skewer mix. Let marinate, the longer the better.
  2. Slice the eggplant. Grill the eggplant and cherry tomatoes in a grill pan with a splash of olive oil until soft and lightly colored.
  3. Then fry the chicken fillet in the same pan until golden brown and cooked through. Slice.
  4. Meanwhile, bake the ciabattas in the oven according to the instructions on the package.
  5. Cut open the rolls and spread with red pesto. Top with lettuce, the grilled vegetables, burrata and finally the chicken.

Chef's tip

Take the burrata out of the fridge half an hour beforehand. At room temperature, it will be the creamiest and flow beautifully over the warm chicken and vegetables.
