Kefta smash burger with onion

Smashburger van kefta met ui van Moroccan Spicy Secrets

A smashburger is all about one thing: that crispy, caramel-brown crust on the minced meat. With the Kefta minced meat mix, you add Moroccan depth, warm and lightly spiced without being heavy. You fry the onion separately with a pinch of cinnamon, which gives a soft sweetness that beautifully complements the truffle mayo and melted cheddar. Ready in half an hour, and you'll have a burger that tastes better than most you order out.

Ingredients

For the burgers

For the fried onion

For assembly

  • 2 brioche buns
  • 2 slices of cheddar
  • 2 lettuce leaves
  • 2 tbsp truffle mayonnaise

Preparation

  1. Mix the minced meat with the kefta mix and a dash of olive oil. Knead briefly, just enough to evenly distribute the spices.
  2. Form two loose balls and place them on a piece of baking paper. Do not flatten them yet.
  3. Heat a pan or griddle over high heat with a thin layer of olive oil. Place the balls in it and immediately press them down firmly with a wide spatula.
  4. Fry until a brown crust forms on the bottom, flip and fry the other side. Place a slice of cheddar on each burger and let it melt.
  5. Remove the burgers from the pan. Fry the onion in the same fat with a pinch of cinnamon until soft and golden brown.
  6. Toast the buns for a few seconds in the pan or on the grill until lightly crispy.
  7. Assemble: truffle mayo on the bottom bun, then lettuce, the burger with cheddar, and on top the fried onion. Put the top bun on and serve.

Chef's tip

Press the ball flat only once, right at the beginning, and then leave it alone. Every time you press it after the crust has formed, you squeeze out moisture and the burger becomes dry. A hot pan is more important than a long cooking time.

Serving suggestion

Serve with thick fries and an extra bowl of truffle mayo on the side.

The flavor of this burger comes from the Kefta minced meat mix, a spice blend also used for kefta skewers, meatballs in tomato sauce, or a tagine with minced meat and egg. Finish with our culinary olive oil and a pinch of Ceylon cinnamon powder for the onion.
