Marinate the chicken with the olive oil and the herb mix.
Cut the tomatoes into slices.
Take a tagine or a large cooking pot.
Spread the tomatoes over the base.
Place the marinated chicken on top.
Add the water to the remaining marinade and mix well.
Pour this over the tomatoes and chicken.
Place the tagine or cooking pot on a medium heat and let it simmer with the lid on for 50 minutes.
Then add the olives and lemons and let it cook.
Remove the lid from the tagine and increase the heat to evaporate excess moisture, creating a thickened sauce.
