Sweet potato filled with spicy minced meat

Sweet potato filled with spicy minced meat, tomato and feta – simple, healthy and packed with flavour.

Preparation time: 60 min

Number of persons: 2

Ingredients:

  • 2 large sweet potatoes
  • 500 g minced meat
  • 1 red bell pepper, 1 yellow bell pepper
  • 1 red onion
  • Olive oil
  • Salt and pepper from the mill
  • 25 g Keftamix from Moroccan Spicy Secrets
  • 200 ml tomato passata
  • Handful of grated cheese
  • Handful of feta
  • Handful of parsley
  • Optional: ground pili for extra spice

Recipe for 2 people

Wash 2 sweet potatoes, pat dry and rub them with olive oil.

Sprinkle with some coarse salt from the mill and bake in the oven at 200°C until done (+/- 45 min).

Cut 1 red onion, 1 red and 1 yellow pepper into slices and fry them in a dash of olive oil.

Season 500 g minced meat with 25 g Kefta mix, add this to the vegetables in the pan and mix in 200 ml tomato passata.

Finish with a handful of parsley and possibly some ground pili for extra spice.

Let it simmer for 10 minutes.

Cut the cooked potatoes in half, mash the flesh and season with salt and pepper from the mill.

Add a handful of grated cheese.

Spoon the mixture from the pan over the potatoes.

Finish with crumbled feta and fresh parsley.
