Southern chicken fillet with oven vegetables and mashed potatoes

Bring sunshine into your kitchen with this colorful, flavorful dish. The combination of Mediterranean-style chicken, roasted vegetables, and creamy mashed potatoes is irresistibly delicious!

Ingredients:

For the vegetables:

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 onion
  • handful of broccolini
  • handful of cherry tomatoes
  • 20 ml olive oil
  • 2 tablespoons Moroccan Spicy Secrets potato-vegetable mix

For the chicken fillet:

  • 300 g chicken fillet, sliced
  • 10 g Chicken mix from Moroccan Spicy Secrets
  • 25 ml olive oil

For the puree:

  • 250 g mashed potatoes
  • 1 tablespoon butter
  • 30 ml warm milk
  • Puree mix from Moroccan Spicy Secrets, to taste

Optional: mushroom or pepper sauce

Recipe for 2 people

Preheat the oven to 220 degrees.

Cut the vegetables into large pieces and place them in an oven dish.

Season with the potato-vegetable mix and pour olive oil over it.

Stir well and bake in the oven for 30 minutes until crispy. (For steamed vegetables, cover the dish with baking paper and aluminum foil.)

Peel the potatoes and boil them until done.

Marinate the chicken fillet with the chicken skewer mix and olive oil.

Fry the chicken.

Drain the potatoes and mash them.

Add the Puree Mix, butter and milk.

Dress and serve!
