Moroccan stew with meat and vegetables

Ingredients:

  • 1 kg lamb or beef
  • 80 ml olive oil from Moroccan Spicy Secrets
  • 34 g ' Tajin meat and vegetable mix ' from Moroccan Spicy Secrets
  • 1 onion (120 g)
  • 1 large tomato (110 g)
  • 40 g tomato passata
  • 15 g fresh parsley
  • 300 g baby potatoes
  • 1 fennel (100 g)
  • 1 sweet potato (130 g)
  • princess beans (100 g)
  • Negin saffron , 8 threads
  • 1000 ml water


Recipe for 4 people

  • Marinate the meat with the 'Tajine meat with vegetables' mix and 60 ml of olive oil.
  • Take a stew pot and briefly fry the meat in 20 ml of olive oil.
  • Slice the onion, cube the tomato and chop the parsley.
    Add this to the meat.
  • Pour the passata into the stew and mix everything together.
  • Add 1 liter of boiling water to the jar containing the marinade and add it to the vegetables and meat. This way, none of the marinade is wasted.
  • Mix the Negin saffron with some boiling water and pour into the jar.
  • Cover and simmer gently for 15 minutes.
  • Arrange the beans and fennel on top of the meat.
  • Cover and simmer gently for 60 minutes.
  • Then cook the potatoes and sweet potato for 20 minutes.
  • Simmer gently until the meat is deliciously tender and the vegetables are soft.

*Serve with fresh Moroccan bread.

**Vary endlessly with your favorite vegetables.

***For some extra spice: cook a hot pepper with the potatoes.
