Stuffed peppers with rice and spiced minced meat
Peppers that soften in the oven, stuffed with rice and minced meat seasoned with our kefta mix. On top, grated cheese melts into a thin golden layer. The filling gets depth from passata, onion and cherry tomatoes, and you finish with a spoon of sour cream, mashed avocado and a squeeze of lime. A plate you put on the table in forty minutes, as spicy as you like it.

Ingredients
For the filling
- 250 g minced meat
- 12.5 g kefta mix
- Moroccan olive oil
- 1 red onion
- A handful of cherry tomatoes
- 80 g tomato passata
- 100 g long grain rice
For the peppers
- 2 bell peppers
- Grated mozzarella
To finish
- 1 avocado
- Sour cream
- 1 lime
- Fresh parsley
- Optional: crispy chili oil
Preparation
- Preheat the oven to 200 °C.
- Halve the peppers lengthwise, remove the seeds and place them in an oven dish. Brush them lightly with Moroccan olive oil.
- Bake for 20 minutes at 200 °C.
- Meanwhile, cook 100 g long grain rice and drain.
- Heat a drizzle of olive oil in a pan. Briefly fry the chopped red onion and the cherry tomatoes. Add 250 g minced meat and season with 12.5 g kefta mix. Cook until the meat is done.
- Pour 80 g passata over the meat and stir well.
- Take the peppers out of the oven. Fill them first with the rice, then spoon the meat mixture on top.
- Sprinkle grated mozzarella over the stuffed peppers.
- Return them to the oven for 10 minutes, until the cheese is melted and lightly golden.
- Mash the avocado into a quick guacamole. Finish the peppers with a spoon of sour cream, the guacamole, chopped parsley and a squeeze of lime. Like it hot? Add some crispy chili oil.
Chef's tip
Slice a thin sliver off the rounded side of each pepper so the halves sit flat in the dish. The filling stays where it belongs and you can lift the peppers out whole.
Serving suggestion
Serve straight away, with lime wedges on the side to squeeze over.
