An oven dish that requires almost no effort: salmon, baby potatoes, and cherry tomatoes that cook together in one dish. Moroccan Spicy Secrets' fish mix does the hard work. With a splash of olive oil, it forms a spicy crust on the salmon, while the tomatoes slowly burst open, their sweet juice mixing with the gravy. The result: tender pink fish, flavourful baby potatoes, and a kitchen that smells wonderful. Perfect for a weeknight when you want to eat well without spending a long time in the kitchen.

Preparation

  1. Preheat the oven to 200 °C.
  2. Place the baby potatoes and cherry tomatoes in an oven dish. Drizzle with olive oil and mix in the potato vegetable mix.
  3. Stir the fish mix with a splash of olive oil to form a thick spice paste.
  4. Place the salmon fillets among the vegetables and spread the spice paste evenly over them.
  5. Finish each piece of salmon with a lemon slice.
  6. Bake for 35 minutes at 200 °C, until the baby potatoes are golden brown and the salmon is cooked through.

Chef's tip

Halve larger baby potatoes for even cooking, and halfway through the baking time, spoon some of the pan juices over the salmon. This keeps the fish extra juicy and allows the tomato flavour to infuse into the fish.

Serving suggestion

Serve with fresh bread or a crisp salad to soak up the flavourful gravy.
