Lemon Chicken Tagine, a Moroccan Classic
Chicken falling off the bone, a thick and salty sauce, and the fresh punch of preserved lemon throughout. This tagine is a staple of Moroccan cooking and surprisingly low effort. You stack everything in the pot and the heat does the rest. All the flavour comes from the seasoning. Ingredients
- 1.5 kg chicken legs
- 45 g chicken with lemon tagine mix
- 4 tbsp culinary olive oil
- 1 onion, sliced
- 3 tomatoes, sliced
- 2 preserved lemons
- 150 g pitted green olives
- 200 ml water
- Parsley, finely chopped (to garnish)
Preparation
- In a large bowl, mix the chicken legs with the olive oil and the chicken with lemon tagine mix. Rub the spices in well and leave to marinate for at least 15 minutes.
- Slice the onion and tomatoes.
- Spread the onion over the bottom of your tagine or a large pot and layer the tomatoes on top.
- Arrange the marinated chicken legs over the vegetables.
- Add the water to the leftover marinade in the bowl and mix well. Pour this over the chicken and vegetables.
- Put the tagine over medium heat and simmer for 50 minutes with the lid on.
- Meanwhile, cut the preserved lemons into quarters and scrape out the pulp. You only use the peel.
- Add the olives and lemon peel and cook for another 10 to 15 minutes.
- Remove the lid and turn up the heat. Let the excess liquid evaporate until the sauce has thickened.
- Garnish with finely chopped parsley and serve.
Chef's tip
Preserved lemon and olives both add salt, so only taste your sauce at the end and add extra salt if needed. Are your lemons very sharp? Briefly rinse the peel under cold water before adding it to the pot.
Serving suggestion
Serve the tagine hot, with fresh bread to mop up the sauce.
