Kefta tagine from the pan
Kefta in tomato sauce is a weekly staple in many Moroccan families. It's usually made in a tagine, but this version can be made in a pan, with the same result: tender meatballs in a rich, spicy tomato sauce topped with a softly cooked egg. The star of the show is our kefta mix, complemented by tagine mix in the sauce. Little effort, lots of flavor, all in one pan on the table.

Ingredients
For the kefta meatballs
For the sauce
- 400 g diced tomatoes
- 20 g tomato paste
- 6 cloves garlic, crushed
- 20 g fresh coriander, finely chopped
- 15 g tagine mix
- 1 red chili pepper
- 2 eggs
- Dash of olive oil
Preparation
- Mix the ground meat with the kefta mix and a tablespoon of olive oil. Knead well and roll into walnut-sized balls. Chill them for a bit.
- Heat a dash of olive oil in a large pan and add the diced tomatoes.
- Add half of the coriander and the crushed garlic and simmer gently for 5 minutes.
- Sprinkle the tagine mix over it and stir everything well.
- Mash the tomatoes with a potato masher to create a coarse sauce.
- Stir in the tomato paste and let the sauce simmer for 10 minutes over low heat.
- Place the meatballs in the sauce, cover, and let them cook for 12 to 15 minutes. Turn them halfway through.
- Crack the eggs between the meatballs, place the red chili pepper on top, and cover the pan until the egg whites are set and the yolks are still runny.
- Garnish with the rest of the coriander and serve immediately.
Chef's Tip
Lower the heat as soon as the eggs go into the pan. This way, the egg white sets slowly while the yolk remains runny, perfect for scooping up with bread and sauce.

Serve directly from the pan with fresh bread to scoop up the sauce and runny yolk.
