Kefta smash burger with onion
A smashburger is all about one thing: that crispy, caramel-brown crust on the patty. With the Kefta minced meat mix, you add Moroccan depth, warm and slightly spicy without being heavy. You cook the onion separately with a pinch of cinnamon, which provides a gentle sweetness that beautifully complements the truffle mayonnaise and melted cheddar. Ready in half an hour, and you'll have a burger that tastes better than most you order out.

For the burgers
- 300 g minced beef (2 balls of 150 g)
- 15 g Kefta minced meat mix
- 1 tbsp culinary olive oil
For the fried onion
- 1 onion, in half rings
- 1 pinch Ceylon cinnamon powder
- 1 tbsp culinary olive oil
For assembly
- 2 brioche buns
- 2 slices cheddar
- 2 lettuce leaves
- 2 tbsp truffle mayonnaise
Preparation
- Mix the minced meat with the kefta mix and a splash of olive oil. Knead briefly, just enough to distribute the spices evenly.
- Form two loose balls and place them on a piece of parchment paper. Do not flatten them yet.
- Heat a pan or griddle over high heat with a thin layer of olive oil. Place the balls in it and immediately press them firmly flat with a wide spatula.
- Cook until a brown crust forms on the bottom, flip, and cook the other side. Place a slice of cheddar on each burger and let it melt.
- Remove the burgers from the pan. Fry the onion in the same fat with a pinch of cinnamon until soft and golden brown.
- Toast the buns for a few seconds in the pan or on the grill until lightly crispy.
- Assemble: truffle mayo on the bottom bun, then lettuce, the burger with cheddar, and the fried onion on top. Place the top bun on and serve.
Chef's Tip
Press the ball flat only once, right at the beginning, and then leave it alone. Every time you press it after the crust has formed, you squeeze out moisture and the burger will become dry. A hot pan is more important than a long cooking time.
Serving Suggestion
Serve with thick-cut fries and an extra bowl of truffle mayonnaise on the side.
